Ingredients and Method to Make Delicious Reshmi Paneer Tikka

Paneer tikka is a popular vegetarian appetizer in Indian cuisine made with marinated cubes of paneer (cottage cheese) that are grilled or baked in a tandoor (clay oven) or on a barbecue. The paneer cubes are marinated in a mixture of yogurt and spices like red chili powder, turmeric, garam masala, and cumin, along with ginger-garlic paste, lemon juice, and sometimes a bit of cream. The marinated paneer is then skewered and cooked until golden and crispy on the outside, while remaining soft and creamy on the inside. Paneer tikka is often served with mint chutney or onion rings and is a favorite snack or appetizer in Indian restaurants and households.

Here is a recipe to prepare Reshmi Paneer Tikka:

Ingredients for Reshmi Paneer Tikka

  • 400 grams paneer, cut into cubes
  • 5 tbsp gram flour
  • 1 cup thick curd (hung curd or Greek yogurt)
  • 2 tbsp ginger garlic paste
  • 1 tbsp lemon juice
  • 2 tbsp cream
  • 1 tbsp garam masala powder
  • 1 tsp red chilli powder
  • 1 tsp cumin powder
  • 1 capsicum
  • 6 drops orange colour
  • 1 tbsp lemon juice
  • 1 onion
  • 1 tbsp chopped mint
  • Salt to taste
  • 2 tbsp oil
  • 2 tbsp butter

How to make Reshmi Paneer Tikka

For the marinade:

  1. In a mixing bowl, add thick curd, ginger-garlic paste, lemon juice, cream, garam masala powder, red chilli powder, cumin powder, and salt.
  2. Mix all the ingredients well and make a smooth paste.
  3. Add paneer cubes to the marinade and mix well so that the paneer cubes are coated well.
  4. Cover the bowl with a lid and let it marinate for at least 30 minutes.

For cooking:

  1. Preheat the oven at 200 degrees Celsius for 10 minutes.
  2. Grease the baking tray with oil.
  3. Arrange the marinated paneer cubes on the greased baking tray.
  4. Brush the paneer cubes with melted butter and bake it in the oven for 10-12 minutes.
  5. Flip the paneer cubes and again brush them with melted butter and bake for another 5-7 minutes or until they turn golden brown and crispy.

Your delicious Reshmi Paneer Tikka is ready to serve! Enjoy it with some mint chutney or tomato ketchup.

•10 gms butter
•8 to 10 slices of bread
•15gms garlic cloves, finely chopped
•⅓ cup steamed corn kernels or tinned corn
•1 medium onion, sliced or chopped
•15gms paneer sliced in square shape
•1 large tomato, finely chopped
•1 medium to large capsicum/bell pepper, sliced or chopped (red or green or yellow bell pepper)
•1 tsp dry oregano
•1 tsp chilly flakes
•1 tsp dry basil (optional)
•¼ to ½ Tsp black pepper powder or add as per your taste(optional)
•1 tbsp olive oil
•Regular cheese  or mozzarella cheese as required

How to make Bread Pizza:-

1. Heat 3 tbsp butter in a pan and saute all the veggies (garlic, onions, and capsicum together and  then paneer separately)
2. Once done, on a Tava melt in some butter and toast your bread till they are little crispy, alternatively toast the bread in a preheated oven at 200 degrees Celsius for 8 to 12 minutes or more, till they are lightly toasted and golden.
3. Apply pizza topping sauce and top it up with all veggies.
4. Grate some mozzarella cheese and encrust the veggies with cheese.
5. Sprinkle seasoning
6. Now microwave till cheese melts, alternatively place the tray back in the oven and bake at 200 degrees Celsius for 8 to 12 minutes or till the cheese melts or gets lightly browned.
7. Before serving to make the bread little crispy by again placing them on hot Tava. Now your bread ๐Ÿ• is ready to serve....

  • 500 grams of white fish
  • 1 teaspoon fish sauce
  • 2 teaspoons green chili paste
  • 1 cup green coriander finely chopped
  • Oil
  • Salt to taste.

Step by step fish ball preparation and recipe

1.    Cut the fish in small pieces.
2.    Grind it into a food processor and make a paste.
3.    Mix green pepper paste, fish sauce and salt.
4.    Keep adding this mixture to 30 seconds.
5.    Put the mixture in a bowl and mix the coriander in it.
6.    Now make small balls of it and put them in the fridge so that they get frozen.
7.    Now fry them in oil.

Eggless cake recipe

How to make spongy eggless cake in pressure cooker:
Pressure cooker cake

1. first grease a 5.5 inch (diameter) and 2.75 inch (height) pan very well with some butter. keep aside. you can also use 6×6 inches square pan or a 5 inches round pan.

2. place a mixing bowl beneath a sieve. add 1 cup all purpose flour (maida) and ½ teaspoon baking powder in the seive. if using unsalted butter, then you can add a light pinch of salt in the flour.
3. sift once.
4. sprinkle 1 teaspoon vanilla extract or ½ teaspoon vanilla essence all over the flour. you can also add vanilla extract later after mixing the batter.
5. take a 5 to 6 litre pressure cooker. remove the gasket (rubber ring) from the lid. also remove the vent weight (whistle).
6. now place the cooker on a low flame on stove top. keep the flame lowest or sim.
7. also add 1 cup sea salt in the cooker. spread the sea salt evenly in the cooker.
8. in a pan, take ¼ cup salted butter (40 grams).

9. now add ½ cup condensed milk.
10. add 3 tablespoons sugar. i used organic unrefined cane sugar. you can also use regular sugar.
11. add ⅓ cup water.
12. place the pan on stove top and heat this mixture on a low flame.

13. stir with a spatula so that the butter melts. mix everything very well with the spatula.
14. let this mixture come to a boil on a low flame.
15. when this mixture comes to a boil, then immediately add it in the flour mixture.
16. with a wired whisk begin to mix with a light pressure, so that over mixing does not happen. while mixing you will come to know if the batter is going to be thick or too thick. the batter in this recipe is of medium consistency – neither thick nor thin. depending on the quality of flour, you may need to add less or more water. if the batter becomes thick, then do add ¼ cup more hot water. so do keep some hot water handy.
17. whisk to a smooth batter, but don’t over do the mixing. if there are small tiny lumps in the batter, then its fine.
18. now pour the batter in the pan. gently shake the pan or tap the sides.
19. keep a heat proof stand or rack in the cooker.
20. place the cake pan in the cooker.
21. secure the lid firmly and tightly on the cooker. do remember to remove the vent weight (whistle).
22. bake on a low flame or sim, till the cake turns golden. it took about 50 minutes for the cake to bake in the 5 litre pressure cooker i used. so consider an average time of 35 minutes to 50 minutes, depending on the size of the cooker, the size & quality of the cake pan and the intensity of the flame. you can check the cake while its baking, by removing the lid.
23. the top should be golden and when you insert a tooth pick in the center of the cake, it should come out clean or with a few cake crumbs, with no sticky batter on it.
24. let the cake become warm or cool down at room temperature. then remove the cake gently from the mould.
25. serve eggless sponge cake warm or at room temperature. if you want, you can also frost the cake with any icing of your choice. refrigerate the leftovers.

Ingredients for baby corn pakoda:-

  • Baby corn-10 in number
  • Ginger -1inch
  • Garlic -5
  • Maida-4tbsp
  • Corn flour -5tbsp
  • Green chillies -5
  • Coriander leaves -chopped
  • Salt-as per taste
  • Oil -for frying

How to make baby corn pakodas:-

  1. Cut the baby corn into length wise.
  2. Boil these sliced baby corns in enough water for 4 minutes. Drain the water and set the boiled baby corns aside. Take the chickpea flour / besan in a bowl. Add turmeric powder, salt, red chilli powder, chaat masala powder.
  3. Add crushed ginger. Add water in small quantities and whisk the batter till it is smooth and there are no lumps. The batter should be neither too thick nor too thin. Keep whisking for around 3 minutes to get fluffy pakoras.
  4.  Dip each slice of baby corn in this batter and deep fry in hot oil in small batches till they turn golden brown.
  5. Baby corn pakoras are now ready to be served.

THINGS TO KEEP IN MIND WHILE MAKING BABY CORN PAKODA:-

1. After mixing the flour don’t make it immediately, give some time to the batter. Baking soda will act as a catalyst here.

2. Always fry the baby corn in low-medium flame, even though we boil the baby corn first before coating with the batter, it needs some time to cook inside. Then only you can get the golden brown baby corn fritters.

3. If you wanted to make baby corn fritters or baby corn 65 then use to plain flour/maida and follow the same preparation method and deep fry it.

4. You can try the baked version of baby corn fritters, prepared a greased plate or on aluminium foil arrange the baby corn and bake it for 15 mins in between we need to turn the other side also.

5. Boil the baby corn before use but if you are making other bajji like potato bhajji or onion bhajji , no need to boil it.

6. The batter should not be too thick or too thin. It should be of idly batter consistency.

Namak Pare or Namakpara is a delicious salty snack enjoyed with tea or coffee. As we know, Namakpara is also a popular “snacks” that most of us like to be placed along with the tea. Good thing about namakpare is that it, afetr its preparation, you can store it for 2 -3 weeks.

Introduction

Namak para is ribbon-like strips of pastry delicately seasoned with cumin seeds, carom seeds, and caraway seeds and deep fried in pure ghee (clarified butter). It requires approximately 10 minutes to prepare and 20 minutes to cook.

Ingredients

  • ·       1 cup maida (flour)
  • ·       luke warm water
  • ·       2 tbsp beaten curd, 3 tblsp ghee
  • ·       1tsp Ajwain
  • ·       3/4 tsp Salt or to taste
  • ·       Oil for deep frying

Note: The ingredients given above is for 1 cup maida, use the other ingredients in proportion accordingly. 

Steps by step guide to cook Namak para

1.    Sieve Maida in a pan.
2.    Add salt , carom seeds, kalonji and melted ghee and mix well.
3.    Make soft dough/ breadcrumbs by adding water little by little at a time.
4.    In a separate bowl combine beaten curd with water. With this mixture knead a tight dough out of the flour salt mixture.
5.    Cover it with a lid and set aside for 20 mins.
6.    Now knead the dough once again for 1-2 mins .
7.    Make balls of the dough and roll them into a ¼" thick flat bread of the size of a medium pizza and cut it into a diamond shape using a knife
8.    Heat the oil in the pan for frying the Namak Pare.
9.    Once the oil is medium hot, fry the Namak Pare till it is golden brown. You need to keep turning them so that both the sides are fried evenly.
10. Drain them in a tissue paper and once cold , store them in an air tight container.

6. Cut into 2" biscuits.
7. Bake on an ungreased pan at 475F for 10-12 minutes, until lightly browned.

2.Grease 12 cup muffins tin Or use paper liners.
3.Combine all the dry ingredients by food processor or wire whisk.

5.Add chopped apple and wet ingredients to dry ingredients.
6.Stir only untill moistened.
7.Spoon into prepared muffin tin's.
8.Bake for 20 minutes.

Garlic bread rolls

Ingredients:

for the dough:

1.5 cup whole wheat flour (atta)
2 tablespoon all purpose flour
(maida)
1 teaspoon dry yeast
150 to 160 ml water - approx ⅔ cup water
½ tablespoon sugar
1 tablespoon oil
½ teaspoon salt

for the garlic spread:

2 tablespoon dairy butter or vegan butter
½ to ⅔ tablespoon minced or chopped garlic or finely crushed garlic (lahsun)
1 teaspoon chopped celery
¼ teaspoon dry oregano
2 pinch carom seeds (ajwain)
1 or 2 teaspoon nutritional yeast
(optional)
½ tablespoon sunflower oil or olive oil
salt as required
black pepper powder as required (kali mirch powder)

How to make Garlic Bread Rolls:

1. mix the 1/2 tbsp sugar and yeast in warm water. allow to sit at room temperature for 10-12 mins.
2. after the yeast solution bubbled and frothy, add the flours, salt and oil to the bowl of yeast mixture.
3. mix well and knead to a smooth and soft dough.
4. rub oil on the whole dough and keep covered for up to 1:30 to 2 hours until leavened.
5. beat the butter with a spoon till light and fluffy. add all the spices & herbs along with salt. mix well.
6. check the seasoning in the garlic spread and add more of the herbs, spices or salt if required.
7. lightly punch the dough before making the rolls on a work surface.
8. divided the dough into two parts.
9. take one part of the dough and on a lightly dusted flour, roll to a round or rectangle till you get 1/2 inch width in the rolled dough
10. spread the garlic butter evenly on the dough.
11. roll the dough till the end.
12. make a similar roll with the other part of the dough.
13. now both the rolls are ready to be sliced.
14. first give a cut from the center and then equally cut the two parts. so you have now 4 equal slices of the rolled dough.
15. grease a pan in which all the 8 rolls will fit. place the rolls in the pan and brush their tops with remaining garlic butter. cover and let the rolls double up for 35-40 minutes.
16. you can also sprinkle some sesame seeds on top of the rolls.
17. bake in a pre heated oven for 30-35 minutes at 180 degrees C till the tops are golden.
18. serve the garlic bread rolls with tea or coffee.

Potato balls

Ingredients:

Potatoes-2
Coconut grated-1/2cup
Chilli powder-1/4tsp
Onion-1
Salt-as reqd
Oil-for frying
Bread crumbs-as reqd
Egg-1


How to make potato ball:

1.boil potatoes with salt.
2.mash it well and keep it aside.
3.make a Chutney using coconut,chilli powder,onion and salt.
4.make small balls of the mashed potatoes.
5.Keep the Chutney inside the potato balls.
6.Dip it in the beaten egg and roll it in the bread crumbs.
7.fry in hot oil till golden brown.

Ingredients

Potatoes-500gm
Peas-250gm
Carrots(grated)-150gm
Coriander leaves-1tsp
Green chillies-5nos
pepper powder-1/2tsp
Allpurpose flour(maida)-6tsp
Bread crumbs-7tsp
Lime juice 2tsp
Cheese-25gm
Salt- as reqd
Butter 100 gm
Cream 6 tsp
Oil for frying


How to make cheesy puffs:

1.mix together boiled peas, salt, pepper and
Lime juice and keep them in refrigerator.
2. mix together butter, cheese and cream and
Keep it in the freezer.
3.mash potatoes and add to it Carrots, coriander leaves ,green chillies, peas
Mixture, salt and pepper.mix well.
4.take a little mixture at a time on your
Palm.
5.fill in the frozen cream and make
Rolls.
6.make a thin batter by mixture water
And maida.
7.dip the above rolls in batter and roll
Them on bread crumbs.
8.deep fry the rolls in hot oil .
Cheesy puffs are ready.Serve with chutney or sauce.

Chilli flakes-1 tsp
Chaat masala-1tsp
Aamchoor-1tsp
Salt-as per taste
Lemon juice-1tsp

How to make aloo fry:

1.at first cut potatoes in cubes.
2.boil with salt till half cooked.
3.now mix altogether chilli flakes,chaat masala & aamchoor with potatoes.
4.toss them well to mix potatoes with spices.
5.drizzle oil on them and bake in oven(optional).
6. Or you can fry in oil also...
7.i always used to fry potatoes before mixing masalas.. .It also make a great taste.
Yummy n spicy potato chat is ready to serve.. 
Serve with Chutney,sauce and lemon juice.
