kadahi paneer

Ingredients :-

250 gms Paneer (cottage cheese) , cut into 1-inch cubes
2 tablespoons Dry Coriander Seeds
2 Dry Red Kashmiri Chillies
1 Green Cardamom
2 medium Capsicums, chopped into 1-inch pieces
3 medium Tomatoes, finely chopped
2 medium Onions, finely chopped
1 tablespoon Ginger-Garlic Paste
1/2 teaspoon Red Chili Powder
2 tablespoons Tomato Puree, optional
2 teaspoons Dry Fenugreek Leaves (kasuri methi)
3 tablespoons Cooking Oil or Ghee (clarified butter)
2 tablespoons Fresh Cream, optional
1/3 cup Water
Salt, to taste

How to make kadahi  paneer:-

1. Dry roast coriander seeds, kashmiri red chilli and green cardamom until nice aroma releases, for around 1-minute over low flame. Turn off flame and grind them in a grinder until smooth powder. Keep aside until required.
2. If you are using frozen paneer, then defrost it before cooking. Place cubes in hot water for 7-8 minutes to keep them soft. Drain  them and keep aside until required.
3. Heat oil or ghee in a non-stick pan over medium flame. Add chopped onion and sauté until it turns translucent.
4.Add ginger-garlic paste and red chilli powder; sauté for 1-2 minutes.
5.Add chopped tomatoes and mix well.
Cook until they turn tender and oil starts to separate or for around 4-5 minutes. Add crushed spices powder (prepared in step-1), mix well and cook for 2-minutes. Add tomato puree and mix.
6.Add chopped capsicum and salt, cook for 3-minutes.
7.Crush dried fenugreek leaves (kasuri methi) using your hand and add in the curry.
8.Add 1/3 cup water and cook for 3-minutes.
Add paneer cubes.
9.Mix and cook for 3-minutes. Add fresh cream.
10.Mix well and turn off flame. Do not cook for longer after adding fresh cream otherwise it may curdle. Transfer prepared curry to a serving bowl and serve hot.

Stuffed chilies

Ingredients :-

Boiled Potato -4
Green Chili -5
Salt -to taste
Red Chili Powder -1 tsp
Garam Masala Powder- 1 tsp
Dried Mango Powder-1 tsp
Oil -2 tsp

How to make stuffed chili:-

 1.Mash the boiled potatoes and add all the spices.
 2. Now slit all the chilies and stuff with potatoes.
3.Finally, heat oil in a wide pan and cook all the stuffed chilies until golden.
4.it can be grilled in oven.

Coconut Chutney Recipe

Coconut chutney is widely used along with idli, dosa, appam, etc. It is one of the most used raw material for making chutney in south-Indian breakfast as well as lunch and dinner. Preparation of coconut chutney is very quick and easy. Coconut chutney recipe is most common counterpart in Indian breakfasts. 

Ingredients of coconut chutney recipe:-

  • 1 cup roughly chopped Fresh Coconut
  • 1 teaspoon grated Ginger
  • 2 Green Chillies, chopped
  • 1 tablespoon Roasted Chana Dal (daliya)
  • 1 tablespoon Curd
  • 1 teaspoon Lemon Juice or Tamarind Paste
  • 1/2 cup Water
  • Salt to taste
  • For Tempering
  • 1/2 teaspoon Cumin Seeds
  • 1/4 teaspoon Mustard Seeds
  • 4-5 Curry Leaves
  • 1 Dry Red Chilli
  • 1 teaspoon Oil

Coconut/nariyal chutney

How to make coconut chutney :-

  1. Take chopped coconut in a small chutney jar of food processor or grinder.
  2. Grind it to make a medium coarse paste and transfer to a plate.
  3. Add green chillies, roasted chana dal and ginger in same chutney jar.
  4. Grind them to a smooth powder.
  5. Add crushed coconut, curd, lemon juice, salt and 1/2 cup water.
  6. Grind them to make a medium coarse paste. If required, add more water to get desired consistency of chutney and grind again. Transfer it to a bowl.
  7. Heat oil in a small tempering pan. Add mustard seeds. When seeds begin to crackle, add cumin seeds, dry red chilli and curry leaves and sauté for 10 seconds.
  8. Take away pan from flame and immediately pour tempering over the prepared coconut paste and mix well. 
  9. Your coconut chutney for idli and dosa is ready.
Enjoy it with your favorite type of dosa, idli etc.

peanut chutney

Ingredients:-

Roasted Peanuts -1 cup
Red chillies -2-3
Garlic clove -1
Tamarind - little
Salt as required
For the seasoning
Oil -2 tsp
Mustard -3/4 tsp
Curry leaves

How to make peanut chutney :-

1.Grind all the above ingredients together with water.
2.Season with mustard and curry leaves. Check for salt.
3.Enjoy with idly, dosa or upma.

Green chutney

Ingredients :-

¾ cup coriander leaves
¼ cup mint leaves
1 green chili
2-3 garlic
½ tbsp lemon juice
black salt as required

How to make green chutney :-

1. rinse the coriander leaves and the mint leaves well in water.
2. chop the green chilli and the garlic roughly.
3. add all the ingredients in a blender or a chutney grinder with some water.
4. the quantity of water can be adjusted as per your liking. but don't make the chutney very thin.
5. blend everything well till smooth.
6. serve the green chutney with indian snacks like samosa, pakora, tikki or dabeli.
7. you can also apply this green chutney on sandwiches and burgers.
8. it stays well in the fridge for 4-5 days.

How to make Karachi halwa

1. Take a bowl add sugar and water bring it to a boil, add lemon juice. In a small bowl add water to corn flour mix well so that it doesn't form any lumps. In a non-stick pan add ghee do not switch on the flame now, and add cornflour mixture to it then mix it. Now switch on the flame on very low.
2. When the mixture is ready,  switch off the flame and add sugar syrup slowly and keep mixing to avoid lumps repeat the same till syrup is completed.
3. Now switch on the flame and keep mixing now add ghee very slowly keep mixing repeat the same process till the ghee is completed.
4. Now add color, cardamom powder cook till ghee is oozing out, now add broken cashew nuts mix well once it is done transfer it to a plate.
5. Grease the plate with ghee and pour the mixture. keep aside for 1hr and cut into small pieces.
