Watermelon Halwa/ Tarbooj Halwa Recipe

As the summer is going to its peak, the watermelon is a very common choice for all to cope the heat waves. So, using watermelon in your diet is very good for your health point of view in the summer.
In watermelon recipe, we will use the white part of watermelon that we generally discard after using its reddish pink pulp. So, you can use the red pulp as raw, for eating or for juice or halwa and the white part can be used in halwa. Watermelon halwa can be described as two types- 
  1. Watermelon pulp halwa- uses pulp in halwa
  2. Watermelon rind halwa - uses white part of watermelon
So, today we are going to discuss the second part, and you will come to the Watermelon rind Halwa recipes in very simple way.

Health benefit of watermelon:

Watermelon pulp consists of about 90 to 92% of water and it is very nutritious, multi-mineral, multi-vitamin laden pulp has many health benefits as it helps in prevention from diabetics, cancer, heart diseases, and is a natural blood pressure controller food and many more beneficial properties. 

Ingredients for Watermelon halwa:-

  • Grated watermelon white rinds -1cup
  • Milk-1 cup
  • Sugar -1/4 cup
  • Ghee-2tsp
  • Kesar-2strands
  • Elaichi powder -1tsp
  • Cashew

How to make Watermelon Rind Halwa/Tarbooj ke chilke ka halwa:-

  1. At first heat oil in a pan on medium flame.
  2. When oil becomes hot, pour grated watermelon in it. Fry it by stirring continuously.
  3. Now add milk, sugar, Kesar strands.
  4. Cook it 2 -3 minutes.
  5. Now add elaichi powder and mix well.
  6. Cook it for some time and turn off the flame.
  7. Garnish it with cashew or almonds before serving.
A special watermelon halwa is ready to serve.

Ande ka halwa/Egg Halwa

Ingredients for Egg Halwa:-

  • 500 ml Milk
  • 200 gms Milk
  • Khoa / powder (I used milk powder)
  • 6 Eggs
  • 250 gms Sugar
  • (you can add more if you want)
  • 1/2 teaspoon cardamom
  • Green powder
  • 1/2 cup Ghee
  • (Clarified butter)

Egg Halwa/Ande Ka Halwa

How to make ande ka meetha halwa (Egg Halwa):-

1. Boil milk in a pan.
2. Add the khoa/milk powder and boil further till it dissolves and the mixture becomes thick. Keep stirring continuously.
3. Once the mixture becomes thick, switch off heat and allow to cool.
4. Add rest of the ingredients into the cooled milk mixture and mix well till well blended.
5. Transfer the mixture to a thick bottomed non stick pan.
6. Cook on medium heat, stirring continuously (approximately 45 minutes to an hour) till the mixture leaves the sides of the pan and forms a ball.
7. Make sure you don't burn the dish.
8. Transfer to a greased dish and flatten the top evenly with the back of the spoon.
9. Cut into desired shape.
10. Allow to cool.
11. Garnish with chopped dried fruits and serve.

karachi halwa/Bombay halwa

Ingredients for Bombay Halwa

  •  Cashewnuts - 1/2 cup.
  •  Ghee - 100 grams.
  •  Lime juice - 1 teaspoons.
  •  Water - 125ml ml.
  •  Cardamom powder - 1 teaspoons
  •  Sugar - 200 grams.
  •  Cornflour - 50 grams.
  • Food color -red, green, or yellow

How to make Karachi halwa

1. Take a bowl add sugar and water bring it to a boil, add lemon juice. In a small bowl add water to corn flour mix well so that it doesn't form any lumps. In a non-stick pan add ghee do not switch on the flame now, and add cornflour mixture to it then mix it. Now switch on the flame on very low.
2. When the mixture is ready,  switch off the flame and add sugar syrup slowly and keep mixing to avoid lumps repeat the same till syrup is completed.
3. Now switch on the flame and keep mixing now add ghee very slowly keep mixing repeat the same process till the ghee is completed.
4. Now add color, cardamom powder cook till ghee is oozing out, now add broken cashew nuts mix well once it is done transfer it to a plate.
5. Grease the plate with ghee and pour the mixture. keep aside for 1hr and cut into small pieces.

How to make Besan ka Halwa

Ingredients-

  • ½ Cup of besan (gram) flour
  • ¼ Cup of sugar or per your taste
  • ¾ Cup of water
  • ¼ Teaspoon crushed cardamom seeds
  • 2 Tablespoons of melted ghee
  • 1 Tablespoons thin sliced almonds
  • 1 Tablespoons thin sliced pista

Gram floor/Besan Halwa

How to make besan ka halwa:

1. Firstly heat 1.5 cups of milk in a thick bottomed pan till it comes to a boil.
2. at the same time, when you keep the milk for boiling, on another stove top keep a thick bottomed pan. add ¼ cup of ghee in it.
3. once the ghee melts, then lower the flame.
4. add 1 cup of gram flour (besan) and mix very well with the ghee.
5. keep on stirring continuously so that the besan is evenly roasted.
6. mix and stir well for 14 to 15 mins on low heat, till the besan leaves a nutty aroma.
7. soon the gram four will start releasing ghee.
8. by now the milk must have also got boiled. in case the milk gets boiled earlier, before the besan gets roasted, then switch off the flame and cover the milk pan. the milk has to be poured in batches. keep the flame to a low and first pour 1 cup of hot milk gradually into the roasted gram flour. while you are pouring the milk, simultaneously keep on stirring also. mix the milk very well with the roasted gram flour.
9. then pour the remaining 1/2 cup milk.
10. continue to mix and stir the mixture for 1 to 2 mins.
11. add 1/3 cup of sugar.
12. stir well so that no lumps are formed. keep continuously stirring for 5 to 6 mins on a low flame.
13. soon the mixture will start thickening. you have to continuously keep stirring the mixture, then only halwa will be smooth and without lumps.
14. add cardamom powder, chopped pistachios and almonds.
15. continue to stir and mix well.
16. you will see the halwa leaving ghee at the sides. the halwa will also start leaving the edges of the pan.
17. switch off the flame. the halwa will become thick as it cools down.Grease Aluminium tray with ghee.
18. Pour besan mixture on tray .spread eventually On tray.
19.you can cut in square shape or diamond shape.
