Ingredients :-


Fresh mint leaves - 1/3 cup, washed and chopped roughly
Fresh coriander leaves - 1/2 cup, washed and chopped roughly
Ginger - 1 tsp, grated
Tamarind - medium sized lemon ball, soak in warm water for 10 mts, remove extract
Lemon juice - 1 tbsp (optional)
Sugar - 2-3 tbsps, dissolve in 1/4 cup water
Water - 1 cup
Cold water - 1 lt (4 cups)

For jaljeera powder:

Cumin seeds - 3/4 tbsp
Black pepper corns - 1/2 tsp
Fennel seeds - 1/4 tsp (optional)
Cloves - 2
Black cardamom - 1
Black salt - 1 tsp
Rock salt - 1/2 tsp
Asafoetida - 1/4 tsp
Dry mango powder - 1/2 tsp

How to makr jaljeera powder :-

Dry roast cumin seeds on low to medium flame for 5-6 mts. Remove from pan and set aside. Next dry roast fennel seeds for 3 mts, set aside. Next dry roast cloves, black cardamom and black pepper corns for 2 mts and set aside. Once the spices cool, grind them to a fine powder along with black salt, rock salt, dry mango powder and asafoetida.

How to make jaljeera:-


1.Grind the coriander leaves, mint leaves and ginger along with a cup of water to a fine paste. Pour the ground paste into a strainer and set aside the strained juice.
2.Add a litre of cold water to the strained juice and mix well. Add the tamarind extract, sugar water and lemon juice and stir well.
3.Add 2 tbsps of the ground jaljeera powder to the liquid and mix well. If the jal jeera is too tangy, add more water. If it needs more tang, add some lemon juice. Adjust according to taste and refrigerate until serving time.
4.At the time of serving, pour into tall glasses. Add ice cubes and garnish with mint leaves or boondi .....

Thandai

Ingredients:- 

Almonds - 1/3 cup 
Cashew nuts - 2 tbsps 
Poppy seeds - 1 tbsp (khus Khus)
Melon seeds - 2 tbsp (magaz) 
Fennel seeds - 1/2 tsps (saunf/sompu) 
Green Cardamom - 5 (elaichi) 
Black peppercorns - 3/4 tsp (kali mirch/miriyalu) 
Sugar - 8 tbsps (adjust according to taste) Milk - 1 1/2 lts 
Water - 3/4 cup 
Rose essence - 1/2 tsp OR Dried rose petals (1 tsp) 
Saffron - few strands (kesar/kumkum puvvu) Pistachios - fistful, crushed 

How to make thandai:-

1. Soak almonds in water for 2 hours.
Soak melon seeds in water for 2 hours, Soak poppy seeds in water for 2 hours. 
 2.Boil milk, add sugar and allow to dissolve. 3.Once the sugar is dissolved, turn off heat and allow to cool. While milk is boiling, peel almonds and place in a bowl. 
4. To this bowl, add the drained melon seeds, drained poppy seeds, cashew nuts, fennel seeds, pepper corns and green cacardamom.
5.Grind all these ingredients to a paste. Add 1/4 cup of water and grind further to a smooth paste. 
6.Add the ground paste to the milk-sugar mixture and mix well. Place lid and leave aside for 15 mts. 
7.In a large bowl, strain the mixture. Keep the strained liquid aside. To the residue (almond spice mixture) add 1/2 cup water and strain again into the large bowl.
8.Add saffron strands and dried rose petals or rose essence to the strained liquid and mix. Chill in the refrigerator for at least 3 hours.
9.At the time of serving, pour into serving glasses. Top with crushed pistachios, slivered almonds and one or two saffron strands.
10.Serve thandai chilled.

Cucumber juice

Ingredients for Cucumber juice:-

1-inch piece fresh ginger, peeled and chopped
1 cucumber, peeled and chopped
Ice
Lemon wheels, for garnish
Cucumber wheels, for garnish

How to make cucumber juice:-


1.In a blender or food processor, blend together the ginger, cucumber and 1/2 cup cold water.
2. Strain and press the puree through a mesh sieve.
3.Serve over ice and garnish with a lemon and cucumber wheel.

Apple ginger juice

Ingredients :-

3 Apples
1/2 inch piece of Ginger, peeled
1/2 Lime or Lemon
1/2 cup Water

How to make Apple ginger juice:-

1.For nice flavor, use at least two different types of apples.(Green apple, red apple )
2.Cut the apples into medium pieces and remove the core.
3.Add cut apple, ginger and 1/2 cup water in a blender jar.
4.Squeeze lime (or lemon) over it.
5.Blend it in a blender or in a mixer grinder until smooth puree.
6.Place a large metal strainer over a large bowl. Pour prepared puree over it. If you don’t have a strainer, you can also use a cheesecloth or a nut-milk bag to strain the juice.
7.Press the mixture using a metal spatula or a rubber spatula to get the maximum juice out of it.
8.Discard the remaining pulp.
9.Serve apple lemon ginger juice immediately and consume it within 10 minutes of preparation.
