Sugar glazed Gujiya

Gujiya is a tasty sweet recipe which is often prepared during occasions like Diwali, Holi, and other popular Indian festivals. There are various ways of making this popular dessert.
 In this recipe of gujiya, I have used a filling of khoya and coconut, sooji, dry fruits and many others.
In Gujrat, it is called as ghughra, in Maharashtra, they are called as karanji..

Ingredients for gujiya:-

1 cup Maida
1 tablespoon
Sooji (Semolina)
1/2 teaspoon Baking soda
1 tablespoon
Unsalted butter or Ghee
A pinch of Salt
1- 2 tablespoon Milk

GUJIYA MIXTURE INGREDIENTS
1/4 cup
Dessicated Coconut
1 cup
Crumbled Khoya/Mawa
1/4 cup Superfine Sugar
2 tablespoon Milk
10-12 pieces of Raisins
12-15 pieces of Almonds
12-15 pieces of Pistachios
2 tablespoon of Cashew pieces
2 teaspoon
Green Cardamom powder
1 teaspoon Saffron strands

SUGAR SYRUP - OPTIONAL
1/2 cup Sugar
4 tablespoon Water
1/4 -1/2 teaspoon
Green Cardamom powder
1 teaspoon Rose water
Few pieces of Saffron strands

How to make Gujiya:-- 

GUJIYA DOUGH
1. Assemble all the ingredients needed for gujiya dough.
2. In a big bowl combine all the ingredients....
3. And knead a soft pliable dough.
4. Cover the dough and let it sit for 30 minutes.

GUJIYA MIXTURE
1. Meanwhile let's begin with our gujiya filling. Assemble all the ingredients.
2. In a heavy bottom pan add mawa, dry coconut and toast them on low heat. Toast for 15 minutes on a low flame and as shown in the third picture when the mixture turns light brown in color, add saffron strand. Mix and take it off the flame.
3. In a separate kadhai add nuts (except raisins)and toast them on a medium flame. Once they start omitting their aroma, take it off the flame and allow it to cool completely. Ground them in a coffee grinder until it turns into a fine powder. Add this nutty mixture to the mawa mixture along with raisins.
4. Stir it well. Add sugar, milk and mix until everything is well- blended.
5. This mixture should be moist. To check - take some mixture in your hands, squeeze and if it forms a soft ball, it's perfect and if its still crumbly add few more drops of milk to form a soft ball.

GUJIYA WITHOUT MOULD
1. Making Gujiyas without the mould. Take a small golf size ball of the dough.
2. Roll it into a thin circle.
3. In the half fold, place some gujiya mixture.
4. Fold gujiya into the half.
5. Apply water along the edges and seal it tight.
6. Using a fork SECURE the edges by making imprints of the fork.
7. Gujiya is ready for frying.

GUJIYA WITH MOULD
1. If making gujiya with a mould, follow the directions below.
2. Roll out a disc shaped circle.
3. Like a blanket place, this rolled out dough over the mould.
4. Fill the gujiya mixture at the base. Apply water along the edges.
5. Flip over the top and firmly press the mould- seal the edges.
6. Using a knife trim off the excess dough and mix it with rest of the dough.
7. Perfectly shaped gujiya in a mould.
8. This is how the finished gujiya looks like.
9. All the gujiyas should be sealed properly or they will open up during frying.
10. Gujiyas are ready for an oil bath.
11. This is what is left of the gujiya mixture.

FRYING GUJIYA
1. Heat oil in a pan. When ready for frying, lower the flame and fry gujiyas until golden brown in colour.
2. Remove from oil and drain it on the paper towel.
3. Gujiyas are ready.

SUGAR SYRUP
1. Let's prepare the sugar syrup. Combine all the ingredients in a pan and on a medium flame bring it to a boil. Scum will start forming on top of the liquid.
2. Using a spoon, collect and discard. I had to remove it twice during the whole boiling process. Keep boiling till the liquid is reduced and it starts to thickens.
3. Lower the heat, dip a spoon in the syrup and remove. Do not touch for the first few seconds, it will be very hot. Touch the syrup with your finger and if it coats your finger it means that it is about to reach its first string consistency.
4. I have prepared one string sugar syrup for this recipe. To test - press your forefinger and thumb together. Start pulling them apart.
5. If the thread/string between your finger and thumb doesn't break after pulling apart, the single thread or 1 string sugar syrup is ready. Take it off the flame and continue with the recipe.
6. Drain the hot syrup.
7. Clean hot sugar syrup /chashni will look like this. Dip each Gujiya in this syrup for 2-3 minutes and set it on a clean plate. If baking the gujiya - follow the same procedure.

•8 to 10 slices of bread
•15gms garlic cloves, finely chopped
•⅓ cup steamed corn kernels or tinned corn
•1 medium onion, sliced or chopped
•15gms paneer sliced in square shape
•1 large tomato, finely chopped
•1 medium to large capsicum/bell pepper, sliced or chopped (red or green or yellow bell pepper)
•1 tsp dry oregano
•1 tsp chilly flakes
•1 tsp dry basil (optional)
•¼ to ½ Tsp black pepper powder or add as per your taste(optional)
•1 tbsp olive oil
•Regular cheese  or mozzarella cheese as required

How to make Bread Pizza:-

1. Heat 3 tbsp butter in a pan and saute all the veggies (garlic, onions, and capsicum together and  then paneer separately)
2. Once done, on a Tava melt in some butter and toast your bread till they are little crispy, alternatively toast the bread in a preheated oven at 200 degrees Celsius for 8 to 12 minutes or more, till they are lightly toasted and golden.
3. Apply pizza topping sauce and top it up with all veggies.
4. Grate some mozzarella cheese and encrust the veggies with cheese.
5. Sprinkle seasoning
6. Now microwave till cheese melts, alternatively place the tray back in the oven and bake at 200 degrees Celsius for 8 to 12 minutes or till the cheese melts or gets lightly browned.

Delicious Malai Paneer Recipe

Ingredients for Malai Paneer
  • 200 gms paneer 
  • 3/4 boiled peas 
  • 3 tbsp oil
  • 1/4 Tsp pepper powder
  • 2 tbsp cream 
  • 1/4 cup milk 
  • 3 tbsp dry fenugreek leaves
  • 1 cup water 
  • a pinch of amchur
  • 1 tbsp salt
  • 1/2 red chilli powder
            
          Onion paste
Cinnamon stick 1/2"
2 cardamom
3 cloves
1 large onion
1/2 "ginger
   
          Tomato Cashew (Kaju) paste
1 large tomato
10 cashew nuts (Kaju)
1green chilli
 
      How to make Malai  Paneer
1.For the onion paste, grind together onion, cinnamon, cloves, cardamom and ginger in a mixer grinder with a little water. Keep aside.
2. For the tomato -kaju paste, grind together tomato, cashews and green chilli. keep aside.
3. Heat oil. Add onion paste and cook on low heat till oil separates. Do not let the onion turn brown.
4. Add tomato paste. Cook till dry and oil separate.
5. Add dry fenugreek leaves, salt, amchur and chilli powder. Add peas and stir for 2 minutes.
6. Add malai with milk, cook on low heat for 2-3 minutes till malai dries up slightly.
7. Add enough water, about one cup, to get a thick gravy. Boil for 2-3 minutes.
8. Add paneer. Bring to a boil. Add pepper powder. Remove from heat.
9. Garnish with roasted cashew-nuts.
Serve with rice.....

1. Mix corn flour, maida flour,egg white, salt in a bowl to prepare a thick dough.

1/4 cup fresh coriander leaves

1 cup yogurt (curd)

5-6 whole black pepper corns
2 bay leaves
1"cinnamon stick
3-4 cloves
2 tbs coriander powder
1 tbs cumin powder
1 tsp salt

1 tsp peppercorns -crushed
1/2 tsp garam masala
1/2 cup fresh cream
    
     Brown paste
2-3 green chillies
1"pieces ginger-chopped
6-8 flakes garlic

   How to make Paneer with black pepper


1.For the brown paste, finely slice the onions. Heat oil in a pan and deep fry the sliced onions in hot oil till golden brown. Drain on an absorbent  paper napkin and cool.
2.Grind the fried onions along with garlic and green chillies with 1/4 cup water to a
smooth brown paste .
3.Heat pure ghee. Add peppercorns and wait for a few seconds. Add bay leaves, cinnamon, and cloves. Wait for 1/2 minute.
4. Add brown onion paste and saute for 2 minutes for low heat.
5. Reduce heat. Add the beaten curd. Mix well.
6. Add coriander powder, cumin powder and salt to taste. Stir for 2 minutes. Add 2 cups water and bring to a boil.
7. Add the paneer pieces and mix in the chopped  coriander and mint leaves.
8. Stir in the fresh cream. Remove from fire. Transfer to a dish. Sprinkle crushed black peppercorns and garam masala. Your paneer with black pepper is ready to serve .

How to make lemon paper fish:-



  1. Place the pieces of fish in the lemon juice and salt for 15-20 minutes and keep it for marinAte.
  2.  Wash again and dry with clean cloth and dry. 
  3. Now add flour, salt and black pepper to the polythene bag and stir well so that the flour can clamify in pieces. 
  4. Exfoliate and flip extra flour from the pieces of fish.
  5.  Now heat the oil in the frying pan and cook the fish for two minutes by speeding the pan.
  6.  Then sharpen the flame and turn the pieces of fish over. Then slow heat and cook again for two minutes. 
  7. Keep in mind that the pieces do not over cooked.
  8. Cook the pieces well on all sides.
  9. When the fish are cooking , in the meantime, mix all the ingredients of sauce on the second burner and keep it cooked.
  10. when Sauce  boil, slow the flame and run for one minute. 
  11. Now take out the pieces of fish from the flame and press them with a paper napkin. So that excess oils can be removed. Then put it in the serving dish and put hot sauce on it and serve it with lemon grass.

How to make mango ice- cream :-

1. Peel the mangoes and cube it. Put in a blender and puree it.
2. Add in the milk powder, skimmed milk, sugar, and low fat cream.
3. Blend for 2 minutes your fresh mango ice cream in liquid state is ready.
4. Pour into two, l liter containers.
5. Put this in the freezer, take out after 1 hour and lightly beat it with a fork and then put back in to set again, repeat for about 3 to 4 times.
6. Leave it undisturbed in the freezer, preferably overnight or until set.

Indian Chicken Tikka

First Marinade
  • 500gm boneless chicken
  • 4 tbsp lime juice 
  • 1 tsp garlic paste

  • 1/2 tsp salt 
  • 1/2 turmeric powder
Second Marinade
  • 2 cup yogurt 
  • 1 cup grated cheese 
  • 1 tbs butter 
  • 1/4 black salt 
  • 1 tbs dry fenugreek leaves 
  • 4 tbs gramflour 
  • 5 tbs oil 
  • 1/2 garam masala powder 
  • 1 tbs chat masala powder 
  • 1/4 food colour 

How to make Chicken Tikka

  1. Marinate the chicken in the first marinate for 30 minutes to 1 hour, then refrigerate. 
  2. For the second marinade, put oil in a pan . Add gram flour and mix well. Keep on fire and stir constantly on gram flour starts to smell roasted and starts to change color. Add turmeric powder and mix well for a few second. Remove from fire. Do not let it turn brown. Cool the oil mixture. 
  3. In a big flat dish put cheese and butter. Rub with the palm till smooth. Add yogurt, mix thoroughly until cheese is smoothly mixed with the yogurt. It should be a smooth paste. Add oil and gramflour. Add all other remaining ingredients of the second marinade. Mix till smooth. Add colour if needed. 
  4. Pick up the marinated tikkas and put in the second marinade. Mix cover with a plastic wrap. Keep covered in the refrigerator for 3-4 hours or till serving time. Bring to room temperature before you start cooking. 
  5. Place the marinated chicken pieces on a greased wire rack. Cook for about 15-2 minutes in the preheated oven till well browned and cooked. If the chicken is cooked but not well browned from top, then put the chicken under the grill for 4-5 minutes. Serve hot with green chutney, and salad.

    3. Thread the chicken pieces onto the soaked wooden skewer and cook under a hot grill for 3-4 minutes, turning frequently, until they are cooked through.
    4. Heat the oil in a large pan and saute the onions and garlic for 1-2 minutes, until softened, but not browned. Add garam masala powder, sugar and chat masala and cook for 3-4 minutes.
    5. Add tomato paste and soya sauce and cook for 5 minutes.

      • 175 gm chocolate powder
      • 1 tbs orange juice 
      • 3 tbs water 
      • 2 tbs unsalted butter

      How to make Chocolate Pudding

      1. Melt the chocolate with the orange juice and water in a small pan over very low heat, stirring constantly. 
      2. Remove from the heat and melt in the butter until incorporated. Scrape the chocolate into the bowl. Beat the egg yolks until blended, then beat them into the chocolate mixture. Set aside into cool. 
      3. In a bowl, whisk the egg whites with the cream. Beat in 1 tablespoon of the sugar, at the time, beating well after each addition. Beat 1 tablespoon of the chocolate, then fold in the rest. 
      4. In a separate bowl, whip the cream until soft peaks form. Fold into the chocolate mixture. Spoon into individual glass bowls. Refrigerate for at least 4 hours.  
      5. Lightly grease a baking sheet with oil and set aside. Put the sugar and pistachio in a small pan over medium heat. When the sugar starts to melt, stir gently until a caramel forms and the nuts start popping. Pour the praline onto the baking sheet and immediately finely grate the orange rind over.       Chilli Paneer

      Vegetarian Chilli Paneer is the modified version of non-veg. recipes like chilli chicken to give its mouth watering wonderful taste replacement. This Indo-Chinese style recipe, served as side dish, and starters in marriage parties and celebrations. It is a great appetizer, very tasty and healthy food.
      It is very easy to prepare and cook. The main ingredients of the recipe is paneer (Indian cottage cheese).

      Chilli Paneer Ingredients:

      Major: 
      • Paneer (Indian cottage cheese)
      • Oil for deep fry

      • 2 tsp chopped garlic (lehsun)
      • 2 tsp chopped celery
      • 2-3 green chillies
      • 1 tsp grated ginger ( adrak)
      • 1/3 cup chopped onions
      • 1/4 cup capsicum
      • 1 tsp sugar
      • 1 tsp oil
      • 1 tsp cornflour mixed with 2-3 tsp lukewarm water
      • salt to taste

      For the Batter
      • 1/4 cup cornflour
      • 1/4 cup plain flour ( maida)
      • 1 tsp soy sauce
      • pinch of baking powder
      • salt to taste

      Step by step preparation of Chilli Paneer. 

      1. If you like your chilli paneer to be bright red in color, you will have to use either food color or red chili paste.To make red chili paste, add ½ tsp sugar, ½ tsp oil, ½ tsp kashmiri chili powder or paprika to a bowl. Stir well, add few drops of water and make a thick paste. Keep this aside till we need it.
      2. Add 3 tbsp. corn flour, salt, 2 pinches of pepper powder to a bowl. Make a thick batter adding water as needed.
      3. Add paneer to the batter and coat them well with batter. If you like, you can also marinate paneer with ½ tbsp chilli sauce, ¼ tbsp soya sauce and add dry flour to the paneer and just toss. I added a bit of red chilli sauce to the batter to get a nice color. That’s optional.
      4. Heat a pan and fry them on a medium high flame. It can be grilled, tawa fried, shallow fried or deep fried. Spread them evenly while frying else they stick to each other.
      5. Stir well and fry evenly until the flour dries up. You may not get the golden color if you have not used chili sauce.
      6. Drain them on a kitchen tissue. Transfer the oil to a cup and retain very little in the pan. Add garlic and saute until they smell good.
      7. Switch the flame to high. Add onions, spring onions greens, capsicum, sliced and deseeded chilli. Saute on a high flame till they are slightly cooked but still crunchy.
      8. Add soya sauce, vinegar, red chili sauce, red chili paste we made at step 1 for the color (optional).
      9. Add 2.5 tbsp water and allow the sauces to bubble and thicken. For the restaurant style glossy look add half tsp of cornflour with 2.5 tbsp. water to a bowl. Stir well and pour it to the pan. You can even skip using corn flour, the smooth feel of sauce and the glaze will be missing.
      10. Add paneer, spring onions and toss on a high flame for 1 to 2 minutes. Next Add 1 tsp corn flour, pinch of salt, half cup of water to a bowl. Stir well to break any lumps. Taste this, it must be slightly salty. You can also add a tsp tomato ketchup. Pour the mixture to the pan. Stir well. The mixture comes to a boil and thickens, add paneer. Switch off the stove. Adjust more or less water, corn flour, salt as needed to get make more gravy.
      11. Garnish chilli paneer with spring onions.

      • 500 grams of white fish
      • 1 teaspoon fish sauce
      • 2 teaspoons green chili paste
      • 1 cup green coriander finely chopped
      • Oil
      • Salt to taste.

      Step by step fish ball preparation and recipe

      1.    Cut the fish in small pieces.
      2.    Grind it into a food processor and make a paste.
      3.    Mix green pepper paste, fish sauce and salt.
      4.    Keep adding this mixture to 30 seconds.
      5.    Put the mixture in a bowl and mix the coriander in it.
      6.    Now make small balls of it and put them in the fridge so that they get frozen.
      7.    Now fry them in oil.
      8.    Serve with Chutney or sauce.

      Traditional Roast Chicken

         Ingredients for Traditional Roast Chicken

      • 1 kg Chicken
      • 25 gm butter 
      • 1 garlic 
      • 3 tbsp roasted walnuts 
      • 1 tbsp chopped parsley
      • 1 tbs salt and pepper
      • 1 lemon 
      • 2  tbsp oil
      • 1 tbsp cornflour
      • 2 tbs water 

              How to make Traditional Roast Chicken

      1. Mix a tablespoon of the butter with the garlic, walnuts and parsley in a small bowl. Season well with salt and pepper. 
      2. Loosen the skin from the breast of the chicken without breaking it. Spread the butter mixture evenly between the skin and breast meat. Place the lime quarters inside the body cavity. 
      3. Pour the oil into a roasting pan. Transfer the chicken to the pan and dot the skin with the remaining butter. Roast in a preheated oven, for 1 hour, basting occasionally, until the chicken is tender and the juices run clear when a skewer is inserted into the thickest part of the meat. Lift out the chicken and place on a serving platter to a rest for 10 minutes. 
      4. Blend the cornflour with the water, then stir into the juices in the pan. Stir oven low heat until thickened, adding more water if necessary. Garnish the chicken with lime wedges. 
      5. Your traditional roast chicken is ready to serve.

      • 20 flakes garlic

      • 3 tomatoes blanched and pureed

      How to make Murgh Musallam

      1. Prick chicken pieces all over with a fork
      2. Grind together chillies, 12 garlic flakes and ginger into a paste. Mix chicken well with ground paste, garam masala powder, salt, turmeric powder, curd and half of the red chilli powder. Allow to marinate for about 1/2 hour.
      3. In a pan, roast together cloves, cinnamon, cardamom, almonds, cumin seeds and coriander seeds.
      4. Heat oil in a pan for about 3 minutes. Add onions and remaining garlic flakes. Fry till onions are golden brown and remove. Strain oil and pour into cooker. Keep a aside.
      5. Grind together fried and roasted ingredients and remaining ginger into a paste, adding a little water from time to time.
      6. Remove chicken pieces. Reserve marinade. Group chicken into a batches. Place cooker with oil on high heat. Lightly brown each batch and remove.
      7. To the remaining oil in cooker,add ground paste. Stir and fry for about 2 minutes. Add chicken pieces, marinate, tomato puree, remaining chilli powder and salt. Mix well & add remaining water.
      8. Close cooker. Bring to full pressure on high heat. Reduce heat and cook for 5 minutes.
      9. Open cooker. Garnish with coriander leaves.Your Murgh Musallam is ready to serve.

      The very first question is, what is white chicken and dark chicken?

      The main reason for the difference of white and red colour of meat is the myoglobin-a oxygen carrying protein, that transports oxygen. The myoglobin is a chemical that causes the meat to appear darker in colour. Hence, those muscles that are require more oxygen and, therefore, have more myoglobin.       • 4 teaspoon salt
      • 3 tablespoon tomato ketchup
      • 1 teaspoon sugar

      How to make White Chicken recipe

      Step-1 Selection of white chicken pieces

      Select white chicken-i.e. breasts and wings, and wash it with water.

      Step-2: Preparation of ingredients for marinating

      • Grind together chillies, cumin seeds, ginger and garlic into a paste and rub on chicken. Allow to marinate for about 1 hour.
      • Separately grind cashew nuts into a paste, adding a little water.

      Step-3: Preparation for white chicken fry

      • Heat oil in cooker for about 3 minutes. 
      • Add onions and fry till golden brown. 
      • Add chilli paste. 
      • Stir and fry for about 3 minutes.
      • Add chicken.

      Chicken Paratha roll

      Ingredients for Chicken paratha roll :-

      For filling material:-

      • 500gm
      • boneless chicken breast, cut into cubes
      • 1 tsp. garlic paste
      • 1/2 tsp. ginger paste
      • 1 tbsp. juice of half a lemon
      • 1 tsp. ground cumin powder (jeera powder)
      • 1/4 tsp. turmeric powder
      • 1/2 tsp. chilli powder
      • 1/2 tsp. salt
      • 2 tbsp. yogurt
      • 1 tbsp. tandoori masala
      • 1 tbsp. tomato paste puree
      • 1 tbsp. butter
      For paratha:-
      • 1 1/2 cup all-purpose flour
      • (you can mix half all purpose and half atta if you like)
      • 2 tbsp. ghee or oil 
      • (a bit extra for rolling and cooking)
      • 1 tsp. salt
      • warm water or milk

      For chicken paratha roll:-

      • Onion rings
      • Tamarind chutney recipe  
      • Mint chutney
      • Sauce 
      • Ketchup 

      To make chicken paratha roll follow the steps suggested below:-

      A. For chicken filling:-

      1.Mix the chicken with all the ingredients except for the butter or oil. Allow to marinate if possible for at least of 30 minutes (longer if possible, up to overnight is fine).

      2.Heat half the butter or oil in the frying pan or tawa. Put heat to high and add, HALF of the marinated chicken (avoid adding the excess marinade, let it remain in the bowl).

      3. Stir-fry on high heat to make sure the chicken cubes are seal so they remain moist and tender. As soon as all sides are seal (takes about 3-5 minutes) turn the chicken out into a bowl and keep it covered.

      4.Add the rest of the butter or oil in the pan. When hot, add the remaining half of the marinated chicken. Repeat the same process, stir-fry on high heat for about 3-5 minutes.

      5.Now, put back the first batch of cooked chicken into the pan with the second batch and mix together. Turn the heat down to medium. Pour any leftover juices or marinade and all it to cook with the chicken for 2 minutes while stirring . This will allow the chicken to have a moist coating.

      6. Cover the pan, put heat to low. Allow steam for another 2 minutes whilst covered, to make sure everything is alright.

      7. Adjust salt and spice to taste.

      8.Turn off the heat .

      B. To make paratha:-

      1.Add the salt to the flour. Rub in the 2tbsp ghee, then slowly add in the warm water or milk and knead until you have a lovely soft dough. The more you knead it the softer your parathas/chapatis will be.

      2.Once it's kneaded, divide the dough into small balls.
      3. Dust the surface with flour, roll the ball, add 1 tsp oil. Dust flour and roll it like a roll, stretch and beat on the surface, then roll it like snail.
      4.heat the flat pan.

      5. roll the dough and place it on the flat pan, cook one side and turn, 6.add oil on both sides and cook till golden.

      C. To make paratha roll:-

      1. Now take a paratha, pour 2-3 spoon of mint chutney , tamarind chutney on it ( length wise).

      2. Put cooked chicken on it and garnish with salad.

      3. Now roll it and wrap in butter paper.

      Your chicken Paratha roll is ready. Serve with ketchup and green chatney.

      How to make mughlai chicken pulaw:

      1.First of all grind garlic, ginger, chilli powder, coriander powder, turmeric & cumin powder to a fine paste.
      2.now heat oil in pan and fry ground onion till brown.
      3.Add half the whole spices  in a pan and then add chicken pieces and mince mutton. Fry it till brown.
      4.Now add ground spices paste in it & fry it.
      5. add 2 cup hot water and cook till chicken become tender.
      6.now beat curd with kesar. And mix to chicken and cook it.
      7.Remove from flame and set aside.
      8.Heat oil in pan and fry tejpatta, half remaining whole spices and fry them.
      9.add onions and fry till brown.
      10.now mix rice and fry it.by adding water and salt cook rice.
      11.Spread a layer of rice in a dish and then spread a layer of chicken mixture on that.
      12.repeat same thing.
      Now garnish mughlai chicken rice with badam..

      How to make spongy eggless cake in pressure cooker:
      Pressure cooker cake

      1. first grease a 5.5 inch (diameter) and 2.75 inch (height) pan very well with some butter. keep aside. you can also use 6×6 inches square pan or a 5 inches round pan.

      2. place a mixing bowl beneath a sieve. add 1 cup all purpose flour (maida) and ½ teaspoon baking powder in the seive. if using unsalted butter, then you can add a light pinch of salt in the flour.
      3. sift once.
      4. sprinkle 1 teaspoon vanilla extract or ½ teaspoon vanilla essence all over the flour. you can also add vanilla extract later after mixing the batter.
      5. take a 5 to 6 litre pressure cooker. remove the gasket (rubber ring) from the lid. also remove the vent weight (whistle).
      6. now place the cooker on a low flame on stove top. keep the flame lowest or sim.
      7. also add 1 cup sea salt in the cooker. spread the sea salt evenly in the cooker.
      8. in a pan, take ¼ cup salted butter (40 grams).

      9. now add ½ cup condensed milk.
      10. add 3 tablespoons sugar. i used organic unrefined cane sugar. you can also use regular sugar.
      11. add ⅓ cup water.
      12. place the pan on stove top and heat this mixture on a low flame.

      13. stir with a spatula so that the butter melts. mix everything very well with the spatula.
      14. let this mixture come to a boil on a low flame.
      15. when this mixture comes to a boil, then immediately add it in the flour mixture.
      16. with a wired whisk begin to mix with a light pressure, so that over mixing does not happen. while mixing you will come to know if the batter is going to be thick or too thick. the batter in this recipe is of medium consistency – neither thick nor thin. depending on the quality of flour, you may need to add less or more water. if the batter becomes thick, then do add ¼ cup more hot water. so do keep some hot water handy.
      17. whisk to a smooth batter, but don’t over do the mixing. if there are small tiny lumps in the batter, then its fine.
      18. now pour the batter in the pan. gently shake the pan or tap the sides.
      19. keep a heat proof stand or rack in the cooker.
      20. place the cake pan in the cooker.
      21. secure the lid firmly and tightly on the cooker. do remember to remove the vent weight (whistle).
      22. bake on a low flame or sim, till the cake turns golden. it took about 50 minutes for the cake to bake in the 5 litre pressure cooker i used. so consider an average time of 35 minutes to 50 minutes, depending on the size of the cooker, the size & quality of the cake pan and the intensity of the flame. you can check the cake while its baking, by removing the lid.
      23. the top should be golden and when you insert a tooth pick in the center of the cake, it should come out clean or with a few cake crumbs, with no sticky batter on it.
      24. let the cake become warm or cool down at room temperature. then remove the cake gently from the mould.
      25. serve eggless sponge cake warm or at room temperature. if you want, you can also frost the cake with any icing of your choice. refrigerate the leftovers.
